I enjoyed a simple, yet spectacular dinner prepared by Chef Brandon Neff at Running Y's Ranch House Restaurant at the Running Y Ranch Lodge in Klamath Falls, OR , www.runningy.com.
This is my favorite comfort food meal, especially after a day of hiking, biking the breathtaking trails, then swimming at their spa. Nibbley's is home of the famous Oatcakes. Having tasted them for breakfast, we can see why they are famous. Debbie Caldwell and her staff do a phenomenal job.
When you walk into Nibbley's, you are in a warm, friendly atmosphere. As you enter the dining area, you pass wonderful pastry cases filled with treats that are difficult to pass up. Walls are adorned with a collection of quilts that tell many stories which Debbie is happy to share.
How difficult is it to order breakfast? In this case, it was incredibly difficult. There were so many choices, it was a challenge to select. Our group ordered a variety: Corn Beef Hash, homemade corn beef tossed with bell peppers, onions and country potatoes, served with two eggs and toast; Breakfast Burrito, bell peppers, onions, potatoes, sausage, bacon, ham and eggs scrambled inside a warm tortilla, jack and cheddar cheese and salsa on top with guacamole and sour cream; Mexican Scramble, corn tortilla strips, eggs, green chilies and onions scrambled with melted jack cheese, topped with sour cream and salsa and served with fruit; and of course, Nibbley's Hearty Oatcakes with a touch of cinnamon. Our breakfast fare barely scratches the surface of what Nibbley's has to offer on its menu. Prices are reasonable and the value is tremendous.

If you guessed the screaming baby on the left is Kate, you're right about that! The play is "Second Childhood," Mrs. Blomquist's Drama Class at Klamath Union High School in 1956. Kate is 6 months old. She got the part because she portrayed a crying baby with such gusto and she had an in through her sister, Betty Jean, who was a student there. She is in the arms of Bob Sheridan. Kate in 1961. I was a kindergartner. I have no idea what the occasion was. I do remember that my mom fixed my hair in really tight curls and I was so mad. I had a little fit, but obviously, my mom won that battle. I look pretty happy here. I guess I got over it. The glare at the top of the photo is from the big mirror in back of me. We have that same mirror hanging in the dining room now. |
